Boil 2 large sweet potatoes, after draining the water, peel and mash them.
In a pan, heat 7 to 8 tablespoons ghee and roast nuts like almonds, cashew nuts and pistachios.
In the same pan, add your mashed sweet potato and stir well on medium flame.
Add 3-4 tablespoons of sugar and mix well.
Add cardamom and saffron strands for better flavour and keep stirring.
Keep stirring your halwa until the oil or ghee starts to leave the sides of pan.
Serve your sweet potato halwa warm and fresh.
