Oil, onion, tomatoes, garlic, ginger, coconut milk, mustard seeds, cumin seeds, turmeric, chilli powder, garam masala, mixed vegetables, fresh curry leaves and salt to taste
Heat oil in a pan, add mustard and cumin seeds. Let them splutter, then add curry leaves for an aromatic base.
Add chopped onions, sauté until golden brown. Then, add tomatoes, garlic, and ginger. Cook until tomatoes turn soft and mushy.
Mix in turmeric, chili powder, and garam masala. Stir well, then add chopped vegetables and cook for 5 minutes.
Add coconut milk, stir gently and let it simmer for 10-15 minutes until the flavours blend and the vegetables are tender.
Add salt as needed. Let the curry simmer for a few more minutes, ensuring everything is well-cooked and flavorful.
Turn off the heat, garnish with fresh coriander, and serve hot with rice or dosa for a delicious South Indian meal.
