Step 1

Preheat the oven to 170°C and line muffin cups with paper cupcake liners.

Melt butter in a pan and pour it over chocolate and cocoa in a bowl. Mix until everything is well combined.

Step 3

Whisk eggs and sugar in a bowl until it thickens. Add the melted chocolate mixture and mix everything.

Step 4

Put some flour and baking soda into a bowl, then add chocolate mixture and buttermilk in portions gradually so that there are no lumps and everything is mixed well.

Step 5

Gently fold in the grated beetroot until just combined.

Step 6

Put the mixture into the cupcake liners and bake for 18 minutes and then let them cool off.

Step 7

For whipped ganache, heat up mixture of cream and chocolate together until smooth. Then cool it for an hour. Whip it up until it is fluffy. Decorate away as you please.
