Peel and chop the beets.
Grate the beets using a blender or a grater.
Add 2 cups of grated beets, rolled oats, cooked lentils, flour, finely chopped onion, minced garlic, peanut butter, thyme, salt, and pepper to the blender.
Blend the mixture, scrape down the sides and blend again until it comes together.
Wet your hands to prevent sticking, then form 4 patties using the mixture.
Either Fry or bake the patties until they’re brown on the outside and soft on the inside.
Serve the prepared patties fresh with the burger buns.
