Mix flour, salt, oil and add water gradually, kneading into a soft dough. Cover and rest for 20 minutes.
Sauté mashed potatoes, chopped green chillies, coriander leaves and spices. Cook until it is aromatic and let it cool completely
Make small balls from the dough. Flatten each into a small disc for stuffing
Place the masala filling in the center, seal edges and flatten without breaking
Heat oil in a pan on medium flame and ensure if it's hot enough for frying.
Deep fry until golden brown and crispy, flip occasionally for even cooking
Drain excess oil and serve crispy hot kachoris with tamarind and mint chutney!
