Prepare the batter with homemade or market-bought dosa batter.
Take a non-stick pan or cast-iron tawa heat it on a medium flame and grease it with ghee or oil.
To make a perfect circular dosa, pour a ladle of batter in the center and spread it in a circular motion.
Now let the dosa cook, make sure to cook it on low heat until the edges start lifting a bit and the bottom turns golden brown.
Great a generous amount of cheese of your choice evenly on the dosa when it's still on the non-stick pan or tawa.
Once the cheese is melted, roll the dosa or fold it in half, and press it gently for a crispy finish.
Remove immediately and serve it hot with chutneys or sambhar.
