Start by brewing a cup of strong espresso or coffee and let it cool down.
In a big bowl, whisk the heavy cream until soft peaks start to form.
Mix the egg yolks with sugar until it becomes pale and fluffy. Then, gently fold in the mascarpone cheese.
In a clean bowl, whip the egg whites until stiff peaks form. Once the egg whites are ready, carefully fold them into the mascarpone mixture.
Place the dipped ladyfingers at the bottom of your serving dish to form the first layer.
