Peel and grate the pumpkin in a food processor
Heat some ghee in a pan, add chopped cashews, and fry them till they are lightly golden
Add the grated pumpkin to the pan and fry for 5 minutes so the raw smell disappears
Add milk along with cardamom powder and let the pumpkin absorb the milk
Add sugar and stir it frequently
Keep stirring until the halwa thickens to your liking
Garnish with the fried cashews and serve!
